SUNDAY AFTERNOON

 

Sundays are all about chilling at home with family, on Sunday I love getting the family together for an afternoon snack. It is so much fun talking, chatting and playing around. You can have a platter any were if it is raining you can have it in side with the fire on. I love having it on the beach with family. It is a simple eazy afternoon snack to enjoy.

 

All you need is little snack that are not very filling. After you get all your snack for your cheese board I would get a big board to fit all the food on the board. Make sure you get all the food on the board and make sure it is spreed out with room.

Fun time in the kitchen,

 

So it is Christmas time I wanted to make some amazing cookies that you can enjoy on a weekend picnic with friends or family, a simple dessert or even a great little gift for your loved ones. I have made some easy fun cookies. You can make the cookies any shape you would like; I went for a simple circle to make it easy for kids to eat. You can make them all year around. You can decorate with icing or however you would like or simply just leave them plain.

I find baking a great thing to do on the school holidays with friends and family, or even bake them for Christmas day dessert.

They are a great little treat that children will enjoy and adults will to.

Ingredients

 

      125g Butter, chopped

1 cup caster sugar

1 egg

            1 teaspoon imitation vanilla

1 tablespoon white vinegar

¾ cups desiccated coconut

             1 ½ cups self-raising flour

½ cups extra coconut

 

Step 1

            Turn oven to 180 or 160 fan forced, grease a baking tray. Beat butter, sugar, egg + vanilla until smooth.

 

Step 2

Stir vinegar into a bowl. Add coconut. Sift in flour. Mix well. When mixed, roll teaspoonful lots into balls. Toss each ball in the extra coconut.

Step 3

            Place 5cm apart on the baking tray. Bake 15 minutes or till golden. Cool on wire rack.

Happy Halloween

 

I know it is a bit late but I love to make cupcakes, so I decided to make cupcakes for Halloween. I love this time of the year with, Halloween and Christmas time. I made fresh cupcakes with red icing and little decorations on top. It is a quick little treat that you can enjoy with friends and family or for a spooky birthday party.

 

 

INGREDIENTS :

 

·       100g dark chocolate

·        1 cup (250ml) water

·        125g butter, softened

·        1 1/4 cups (255g) brown sugar

·        3 eggs

·        1 1/2 cups (225g) self-raising flour

·        1/2 cup (75) plain flour

·        1/4 cup (30g) cocoa powder

 

STEPS :

Preheat oven to 160°C. Line 18 x 1/3-cup (80ml) capacity muffin pans with paper cases.

 

Combine the chocolate and water in a small saucepan over low heat. Cook, stirring, for 5 minutes or until chocolate melts and mixture is smooth. Remove from heat and set aside to cool.

 

Use an electric mixer to beat the butter and sugar until pale and creamy. Add the eggs, one at a time, beating well between each addition, until just combined. Add the flours and cocoa powder and stir until just combined. Add the melted chocolate mixture and stir to combine. Spoon evenly among the lined muffin pans. Bake in preheated oven for 20 minutes or until a skewer inserted in the center comes out clean. Remove from oven and transfer to a wire rack to cool.

 

To make the chocolate sour cream ganache, place the chocolate and sour cream in a heatproof bowl over a saucepan of simmering water. Cook, stirring, for 5 minutes or until chocolate melts and mixture is smooth and glossy. Spread over each cake and set aside to set.

Quick easy breakfast,

I don't always have this fruit salad every day, but it is a quick easy breakfast to enjoy. You don't have to have a fruit salad for breakfast you can take it on a picnic with your friends and family, you could even make a small fruit salad to have as a snack.  A quick  fruit  smoothie before or after a morning run or workout, even before work it is a simple and easy breakfast that you can take with you. You could add as much or as little fruit as you would like in your fruit salad or smoothie.

In my fruit salad I had,

Watermelon

Rockmelon

Grapes

Strawberry

Kiwi fruit

Orange

and a side of yogurt 

It is a quick easy breakfast that anyone can have and enjoy.
